Barrel Honey Update

Honey is in the barrels!! July 3rd we loaded up the whisky barrels with honey. Took a sample this week just because I couldn't stand it. It is coming along but needs more time. Last year we put the honey in on July 26th and took it out on October 2nd. We'll target about that same duration, a little over 2 months maybe longer. Once the honey is removed, we return the barrels to John Emerald Distillery and they fill them with single malt whisky. They bottle the whisky in time to have it available for the holidays.
